Lobster Frittata

| Directions Preheat oven to 350 butter the sides and bottom of a 10″ springform pan. Heat oil in a large pot over mde-high heat Add onion, garlic, squash and peppers Saute, stirring frequently until crisp-tender, about 10- 15 minutes Whisk cream and eggs together in a large bowl while veggies are cooking Whisk in saffron, basil, salt and pepper Crumble boursin into pieces and add to mixture Stir in the lobster and veggies Add the Gruyere and stir well Pour into prepared pan Bake until just firm throughout, 45 - 60 minutes Cool 10 minutes and cut into wedges.
